Baur au Lac's Marguita brings the relaxed energy of Saint-Tropez to Zürich, serving Mediterranean cuisine right on the shores of Lake Zurich. Chef Maximilian Müller anchors the kitchen with a focus on French and Mediterranean classics that feel effortless yet precise. Guests gather under a colossal sun umbrella on the terrace, where summer evenings draw up to two hundred diners eager for coastal flavors. The atmosphere balances hotel grandeur with a distinctly unpretentious invitation to linger and share plates.

Signature plates and seasonal favorites

The menu highlights a flawless fritto misto paired with jalapeño mayo and a vitello tonnato brightened by Amalfi lemon zest. A standout carpaccio of gambero rosso arrives with salted lemon, offering a briny depth that complements crisp seafood. Even simple sides receive attention; seven hand-selected salad leaves dress in a filigree vinaigrette accompanied by paper-thin zucchini slices. Chef Müller ensures consistency across the week, whether he is guiding the pass or overseeing the service, delivering dishes like sea bass baked in a salt crust or a bouillabaisse rich with scallops, mussels, and giant prawns.

Dinners conclude with a white chocolate rose stuffed with apricot cream, served alongside verbena ice cream and apricot sauce. The beverage program features an extensive wine and drink list designed to complement the food. Marguita sources olive oil directly from a Catalonian family they have trusted for over thirty years, pouring it generously to set the table for leisurely lunches. The space encourages conversation and connection, turning routine meals into celebrations where friends toast to life's big and small moments.

Upscale French-style brasseries are currently trending. This is evident in the success of the stylishly appointed Brasserie Baur’s, which has quickly cultivated a loyal regular clientele through its consistency and elegance. After all, you can always count on the evergreen dishes from “Baur au Lac” head chef Olivier Rais here—the rum-infused beef tartare, sole à la meunière, or Chateaubriand. We were also thrilled by the seasonal menu: crusty bread with salted butter and a delicate spring salad featuring goat cheese and herb vinaigrette. A hand-cut smoked trout tartare with a bright citrus note. Crisp asparagus in hollandaise sauce, accompanied by thinly sliced, generously portioned ham. A superb Milanese piccata, almost upstaged by a wonderfully creamy saffron risotto. And a classic lemon tart with sour cream ice cream to finish. An impressive wine list featuring exciting cru wines available by the glass.
