The story
Mikuriya, located within the Dolder Grand in Zürich, takes its name from a Japanese term meaning “the kitchen where food is prepared for special guests.” Here, the guiding principle is omakase – “I leave it up to you.” The experience is built around a single, intimate counter where Chef Atsushi Hiraoka crafts each course before your eyes, turning dinner into a quiet dialogue between chef and guest. This is not a set menu but a bespoke progression that respects the purity of each ingredient, especially the sushi, where seasoning is deliberately subtle to let the original flavours shine.
Born in Tokyo, Hiraoka brings more than three decades of experience from both Japan and Switzerland to his work. At the counter, he prepares sushi-kappo dishes – a style that blends traditional sushi with light, seasonal fare – while occasionally sharing the secrets of Japanese cuisine. His approach is both innovative and deeply rooted in the craft, earning the restaurant 17 Gault-Millau points and a Michelin Recommended distinction.
The evening unfolds in multiple courses, with the option to pair selected dishes with sake, shochu or Japanese beer. Sake, in particular, is the perfect match for the delicate, umami-driven cooking. The setting is calm and focused, designed for those who appreciate the nuance of Japanese Contemporary cuisine. Each plate is a reflection of Hiraoka’s artistic talent and his respect for the traditions of omakase.
Mikuriya offers seven seats per evening, ensuring an intimate, personal experience. The restaurant is open Wednesday to Saturday from 18:30. Guests are encouraged to note any allergies in advance so the team can adapt accordingly.
