Chef Simon Müller, owner and chef de cuisine, leads a kitchen that works with what is closest at hand. The menu changes continuously, driven by the seasons and by what the restaurant’s own garden at Triemli yields in summer and autumn. That produce is supplemented by a carefully chosen network of local suppliers and a wine list that favours Old World bottles whose character matches the kitchen’s approach. Guests choose between four, five or six courses from a surprise menu that evolves regularly – an invitation to trust the kitchen and discover new combinations. And from June to August 2026, rémy moves to the lake: a summer pop-up at Badi Tiefenbrunnen on the shores of Lake Zurich serves a casual fine-dining dinner by the water, with the same seasonal spirit.
