The story
At Sablier, the name itself is a promise: time stands still, leaving room for enjoyment. Perched atop The Circle at Zürich Airport, this rooftop restaurant and bar offers contemporary French cuisine with a view that stretches over the green park below. The kitchen, led by Chef de Cuisine Daniel Kirchmeier, has earned 15 GaultMillau points for its modern, relaxed take on French classics. GaultMillau praised the precision of the cooking, noting a Black Cod confited in nut butter with artichokes and a sensational mussel beurre blanc. The restaurant has also been recognised as Michelin Recommended.
The open show kitchen is the heart of the space, where guests can watch the team prepare French charcuterie and cold dishes. The à la carte menu balances tradition with invention. Starters might include a perfect egg with morels and white asparagus, or a kingfish aged in-house with verjus and elderflower. Mains range from a classic Bouillabaisse to a Cannette à l'Orange, while desserts like the Tarte au Citron with elderflower and blueberry keep the finish bright. A dedicated Fruits de Mer platter is available from the evening, and a four-course dégustation menu offers a curated journey through the kitchen's best work.
The restaurant’s terrace is billed as the largest rooftop terrace in Switzerland, providing an airy, green outlook that feels a world away from the terminal below. Inside, the design offers intimate niches and a golden bar where signature cocktails are mixed. The space also hosts live music evenings and seasonal events, from a 1 August brunch to summer rooftop parties. Sablier is part of the Segmüller Collection, a group of boutique restaurants in Zürich.
