The story
Perched above the city within the iconic Dolder Grand, The Restaurant is a showcase for Chef Heiko Nieder’s precise, creative Modern Cuisine. Awarded two Michelin stars and 19 Gault-Millau points, it is among the most decorated restaurants in Zurich, offering a dining experience that balances innovation with elegance.
Since the opening of The Restaurant, Chef Heiko Nieder has defined its culinary identity. His cooking is characterized by an extraordinary spectrum of aromas, moving beyond classic flavor profiles to create dishes that are both surprising and refined. For his work, he has been named “Koch des Jahres 2019” (Chef of the Year) and continues to earn top accolades. His influence even extends to the skies: he designs gourmet menus for Singapore Airlines’ first and business class on flights from Zurich to Singapore.
The Restaurant offers two distinct menus. At lunch, the Amuse-Bouche Menu provides a dynamic cross-section of Nieder’s repertoire. In the evening, the multi-course The Restaurant Menu is served, with a vegetarian option available upon request. For those seeking a deeper connection to the kitchen, the Chef’s Table seats four to five guests in an elevated area within the kitchen, where the nine-member crew prepares each dish with meticulous care. This experience is available for both lunch and dinner as a seven-course menu. Private dining is also offered for groups up to twelve, with a dedicated room and a personalized menu crafted by Chef Nieder.
The wine program is equally ambitious, featuring over 800 labels and roughly 1,500 bottles stored in the hotel’s striking Winecube. Young sommelier Katharina Sarrot, recognized by GaultMillau, works closely with Chef Nieder to select pairings that complement each course. The Restaurant’s atmosphere is refined yet welcoming, making it a destination for those who appreciate the depth of Modern Cuisine at its highest level.
