At The Address Downtown, 99 Sushi Bar brings its signature Japanese Contemporary cuisine to Dubai. The restaurant has earned a Michelin Recommended distinction, a nod to the precision and creativity that define its kitchen. The setting balances sleek design with a lively lounge bar, open until late, making it a spot for both business lunches and evening dining.
The food list reads like a tour of modern Japanese cooking. Start with an Alaskan king crab gunkan or lobster maki with sake, wakame, cucumber and yuzu. Toro tuna maki arrives wrapped in a thin layer of daikon, paired with avocado and shiso leaf. Warm nigiris appear alongside turbot flambé nigiri with coriander oil, and toro flambé with tomato purée. A grilled toro and smoked Iberian air-dried beef temaki comes with a chili tomato emulsion. For something heartier, there is roasted suckling pig toban jan with pistachio, or Mont Royal young pigeon with crystallized pumpkin. Two sea urchin tempura sticks with shiso and a sauce of egg yolk, soy, lemon and butter show the kitchen’s playful side.
On weekdays, the restaurant offers an Omakase Business Lunch from 12:00 PM to 2:15 PM. It is a focused way to experience the chef’s selection without the evening pace. The lounge bar stays open later, with a separate timetable for after-dinner drinks.
