On the rooftop of Eden House in Satwa, moonrise seats just fifteen guests around a chef’s table. This is not a restaurant that hides behind velvet ropes; it’s an intimate space where every plate arrives with a story. Chef Solemann Haddad leads the kitchen, serving an ever-evolving degustation menu that puts Middle Eastern ingredients and culinary heritage at center stage—filtered through a global perspective.

The Chef Behind the Counter

Solemann Haddad is Dubai’s youngest chef-patron and a self-taught cook. He opened moonrise without formal training, a fact he never saw as a limitation. Without the weight of classical mentorship, his view stayed wide open. Born and raised in Dubai, his cooking is rooted in the region but shaped by global influences, especially Japanese ingredients and techniques. He calls the result “Dubai Cuisine”: a personal, ever-changing expression built on obsession and a deep love for Middle Eastern produce, interpreted through a global lens.

He works closely with homegrown artisans, mills, and growers across the UAE, while also sourcing from the best producers worldwide—always in service of flavor, always seeking ingredients in their most expressive state.

Recognition That Fits

The Michelin Guide awarded moonrise one star in 2026, calling Haddad “home-grown – and largely self-taught” and praising his “cleverly conceived and carefully constructed dishes.” That same year, 50 Best described his menu as “both an exploration of and love letter to the food of his city and childhood, mixing the Middle Eastern, European and Japanese influences that punctuate Dubai’s culinary culture.” Gault&Millau, which named him Future Great of the Year in 2022, noted that “the young chef (still under 30) pushes boundaries and harnesses the best in local produce while storying his hometown through food.”

What to Expect

The seven-course tasting menu changes regularly, reflecting the season and Haddad’s restless curiosity. There is no à la carte here—just a single, surprise sequence that unfolds at the counter. Beverage pairings, including a curated wine list, accompany the meal. Because of the set-menu format, the kitchen can accommodate only certain allergies and intolerances; gluten, dairy, and seafood exclusions are not possible. Advance notice is required for any dietary request.

Moonrise is fine dining stripped of pretense: a small room, a singular vision, and cooking that tastes like nowhere else.
