The name itself draws from ancient Ninive, one of the oldest cities of Mesopotamia, where the Hanging Gardens of Babylon may have once flourished. The kitchen at Ninive does not revisit the past but revives sometimes-forgotten tastes from a region with powerful culinary traditions.
