The Chef Behind the Modern Indian Movement

Chef Vineet Bhatia, born in Mumbai in 1967, credits his mother’s inventive cooking for his early inspiration. Today, he is widely regarded as the father of modern Indian food, and his Dubai outpost, Indego by Vineet, is a testament to that vision. Located inside the Grosvenor House, a Luxury Collection Hotel, the restaurant has earned a Michelin recommendation for its refined yet approachable take on Indian cuisine.

An Atmosphere of Warmth and Detail

The interiors are deliberately curated – handpicked design pieces, a striking feather chandelier above the cocktail bar, and an open kitchen that hums with energy. The space feels sophisticated but not stiff, with a terrace overlooking Dubai Marina. The dress code is smart casual (no shorts or sandals), and the restaurant welcomes children under eight until 8:00 PM, keeping the atmosphere convivial.

What’s on the Plate

The menu is designed for sharing, drawing from street-food traditions and techniques involving the griddle, clay oven, grill, and stew pot. Starters like the Chaat Trilogy (potato chaat, papdi hay, dahi bhalla ice cream) and Coastal Scallops (butter-garlic grilled, with tomato-lemongrass sauce) show the range. Mains range from the Ambarsari Cauliflower – a grilled steak in homemade pickle marinade – to the Lamb Shank Rogan Josh, slow-cooked in Kashmiri spices. Seafood lovers can turn to God’s Own Country (pan-grilled seabass with lime-lemongrass moilee) or the Grilled Ginger Lobster with curry leaf–chilli marinade. Comfort bowls like Butter Chicken and Dal Maharani round out the offerings, alongside breads such as Peshawari Naan and Blue Cheese Naan.

Cocktails, Private Dining, and Weekends

The cocktail bar, crowned by that feather chandelier, serves craft drinks designed by an in-house mixologist. For private celebrations, the Living Room offers a discreet space overlooking the marina. Weekend lunches (Saturdays and Sundays, 1:00 PM to 4:00 PM) feature a curated set menu with two or three courses, priced at AED 145 and AED 185 respectively. A Summer Set Menu is also available daily, offering a three-course vegetarian or non-vegetarian experience at AED 250 per person.
