Indya by Vineet is the vision of Chef Vineet Bhatia, the world’s first Michelin-starred Indian chef and a figure widely credited as the father of modern Indian food. As the chef puts it, “Indya is an opportunity to have fun with Indian food, to challenge perceptions and introduce new ingredients to age-old dishes.” The menu is built around small plates meant for sharing, with choices grouped as “From the Earth,” “From the Land,” and “From the Sea.”

A Menu That Plays with Tradition

Street food meets sharing plates on an eclectic menu that balances familiar flavours with unexpected twists. Diners can start with offerings from the Chaat Trolley, then explore dishes like Quinoa Dahi Magnum, Samosa Pinwheels, or Charcoal Amritsari Fish Pakoda. From the Land section features Mustard Chicken Tikka, Kerala Fried Chicken, and a playful “Kheema Burrata Pijja Naan.” Desserts are equally inventive, with names like “Amar Akbar Anthony” (gulab jamun, sheer korma, and caramelised banana ice cream) and “Seeta Aur Geeta” (chocolate peanut halwa with kaju kati kulfi).

The Gin Room Experience

Cocktails and gin take centre stage at Indya. The dedicated Gin Room showcases 24 different gin brands from around the world, alongside a menu of signature cocktails with playful names such as “Tiger Peeta Hai Margarita” and “God’s Own Country Kerala.” Whether you prefer a classic G&T or a creative concoction, the bar adds another layer of personality to the dining experience.
