The story
At the Mandarin Oriental Jumeira, Netsu by Ross Shonhan brings the theatre of fire to Dubai’s dining scene. This Japanese Contemporary steakhouse is built around the traditional Warayaki technique—straw fire cooking—where flames arc around the kitchen counter as the chef torches the straw, creating an almost theatrical ambience inside. The experience is as much about the spectacle as it is about the precise, smoky flavours that emerge.
Acclaimed Chef Ross Shonhan, who grew up on a family cattle farm in Queensland and honed his craft alongside Nobu Matsuhisa, leads the kitchen. The menu showcases Warayaki-style grills alongside sushi and sashimi platters, and other Japanese-style dishes. The restaurant’s recognition by the Michelin guide reflects the quality of this focused, ingredient-driven approach.
The space offers two distinct moods. As evening falls, the large terrace invites alfresco dining in a relaxed, convivial setting. Inside, the counter seating puts diners front and centre of the cooking action. A dedicated Sake Sommelier has curated a premium selection of artisanal sake, served in unique pots, while the wine list spans over 250 labels and the signature cocktails take Japanese inspiration.
Seasonal offerings include the ‘Hands On’ menu, an immersive journey through everyday Japanese flavours, and a weekend brunch featuring bold Japanese dishes from smoky Warayaki Tuna Tataki to Australian Wagyu Ribeye. For a lighter take, the Netsu Burger Experience pairs a grilled Wagyu burger with nigiri and a sesame monaka. Each menu reflects the restaurant’s commitment to contemporary Japanese cooking, executed with the confidence that comes from a chef who has spent years mastering his craft.
