The story
At Rüya in Dubai, the cuisine draws from the Anatolian peninsula, a region whose culinary history stretches from the Mediterranean to the Black Sea. The kitchen crafts contemporary dishes that respect that heritage while embracing modern techniques. All ingredients are seasonal, with herbs and spices painstakingly sourced to deliver the finest expression of Anatolian flavour. This dedication to quality is a key reason for Rüya’s Michelin Recommended distinction.
The restaurant is located on the third floor of The St. Regis Dubai, The Palm. The interiors, designed by Conran and Partners, feature a series of rooms with brass detailing, wood accents, and plush seating. The atmosphere is further defined by a carefully selected music programme, which plays an integral role in the dining experience.
Rüya’s bar, Mekan, offers a journey through the seven regions of Anatolia through its signature cocktails. The drinks incorporate ingredients such as Mediterranean fruits, Black Sea tea, pomegranate, and pistachio. Classics are reimagined with an innovative twist, and the selection of spirits caters to discerning drinkers. The Nazar Sour is a notable signature.
The menu presents modern dishes inspired by historic Anatolian gastronomy. Highlights include the Anatolian Experience, a chef’s tasting menu that begins with Tirnak pide bread, homemade butter and olives, then moves through dishes such as Isli Patlican (aubergine and walnut purée) and Manti (beef and lamb stuffed pasta with garlic yoghurt). Desserts feature an Anatolian Toast with saffron and egg bread, star anise caramel, and mastic ice cream, as well as a classic Künefe with baked Kadayif pastry and Nabulsi cheese. A dedicated wine list, curated by the sommelier team, represents exciting regions from around the world.
Whether for lunch, dinner, or a late evening at the bar, Rüya offers a refined expression of Turkish hospitality and Anatolian culinary traditions.
