The story
Pluma brings traditional Spanish cooking to Amersham as a family-run venture led by Head Chef Javier. The menu relies on produce sourced directly from Spain, including Arbequina olive oil and saffron cultivated in Castilla-La Mancha. A cornerstone of the kitchen is the black Iberian pig, exclusively acorn-fed; the signature pluma cut gives the restaurant its name. This dedication to authentic sourcing underpins the establishment's culinary reputation, earning it two AA Rosettes for excellence.
Guests share plates that highlight these regional products. The hand-cut 100% Iberico ham arrives alongside chargrilled chorizo finished in white wine. Squid served in tempura with lime mayonnaise pairs with creamy black rice enriched with garlic saffron alioli. The dining experience often turns to the Spanish cheeses selection, featuring Payoyo, Idiazabal, Manchego and La Peral accompanied by quince, walnuts and Gallego bread. These dishes reflect the open kitchen's approach to honest, flavour-forward cooking.
The restaurant occupies an 18th-century building in Old Amersham where historic charm meets contemporary design. Exposed ancient wood and brickwork coexist with a new glass extension, creating a space that feels both rooted and refreshed. The warm welcome extends to a curated wine list drawn from Spain's diverse regions, ranging from biodynamic rosés in Castilla-La Mancha to classic Riojas. This blend of architecture and beverage expertise rounds out the visit to Pluma.
