The story
At Henry Robertson, the dining room at Palé Hall, the story of the Victorian estate meets the season on the plate. Named after the industrialist who built the hall in 1871, the restaurant operates under the direction of Chef Partner Luke Selby and his team. Each service is shaped by what the Welsh landscape offers: ingredients sourced with care, handled with precision, and allowed to speak for themselves.
The room itself sets the tone. Ornate ceilings, period features, and views across the gardens create an atmosphere that is grand without being stiff. This is fine dining rooted in place, guided by discipline, and delivered with quiet confidence. The approach is Modern British, drawing on the finest produce from the surrounding valley and beyond.
Menus unfold at their own pace—unhurried, considered, and driven by the season. Guests can choose from a six-course tasting menu or explore à la carte, with options like Orkney scallop with Thai green curry and cucumber, halibut with potato and smoked pike roe, or duck liver with spiced peach and sweet wine. A seasonal lunch menu offers two or three courses, while wine pairings—classic or iconic—are drawn from the hotel’s cellar.
The restaurant’s recognition by Michelin reflects the precision and clarity of the cooking. At Henry Robertson, exceptional food feels entirely at home in a space where history, landscape, and craft come together.
