The kitchen operates on a direct supply line to Green Street Butchers, providing native breeds aged entirely on-site. Chefs build menus around this dry-aged beef, incorporating hand-rolled pasta, home-baked bread, and sustainable seafood landed daily. The method stays simple: source exceptional produce and prepare it without obscuring the flavour.
