James Wilkins trained under Michel Bras and previously held a Michelin star at his original Bristol location. His career spans kitchens across England, France, Japan, and Turkey, yet he now channels that global experience into this single table using classical French techniques adapted for the moment. Each evening brings a four-course lunch or six-course dinner built around ingredients selected daily. Local vegetables arrive alongside wild fish from Brixham market and shellfish sourced directly from Scotland.
The kitchen highlights Scottish langoustines in a velvety bisque served with seaweed brioche and fennel butter. Wild John Dory appears with a black truffle crust, girolles, and a sea truffle butter emulsion featuring peas and wild asparagus. Meat courses might include caramelised veal sweetbreads with morels or pigeon breast paired with Roscoff onions and chocolate nibs. Every meal concludes with home-baked bread and petit fours rather than a heavy finale.
Housed in a converted art shop, the space accommodates only six diners to maintain an intimate pace throughout the service. Wilkins manages the entire operation personally, allowing guests to discuss the creative process behind each dish as it arrives. The predominantly French wine list complements the food with selections from small-batch producers who practice minimal intervention.
