Bincho Yakitori occupies a spot on Preston Street in Brighton, delivering Japanese cooking shaped by chef David Miney's residency in Tokyo. After spending nearly three years immersing himself in the capital's late-night tavern culture, Miney returned to bring this izakaya ethos to the South Coast. The kitchen rejects a fixed hierarchy of starters and mains. Simple food takes center stage, cooked over natural fire. Dishes arrive straight from the binchotan grill, emphasizing big flavours while skipping unnecessary garnish.
The menu prints anew each week, with the chef drafting specials daily. Sharing plates dominate the service model.
