The story

Brusco: An Intimate Italian Wine Bar in Brighton

Seasonal plates and purposeful cooking

Brusco delivers seasonal Italian cooking to a compact space in Brighton. Victoria Skinner leads the kitchen with a background rooted in the city’s Moro. She builds a short menu around fresh local produce and daily changing ingredients. The open layout keeps the pace tight while allowing guests to watch the preparation unfold.

Honest dishes on a focused menu

Skinner works closely with Trenchmore Farm to source meat that appears as bavette with a smooth tonnato sauce. Rustic fennel sausages arrive alongside lentils and a sharp salsa verde when they make the rotation. Portions are sized to satisfy a single course while leaving room for additional plates. The Italian kitchen treats every component with careful attention rather than relying on heavy sauces.

A quiet corner for vermouth and conversation

The venue sits on a tree-lined street in the Montpelier neighbourhood where cream-painted walls and striped café curtains catch the eye. Inside, bare plaster surfaces and simple furnishings create a relaxed setting that comfortably holds twenty guests. The long dining counter faces a bar stocked with bottles of amaro and artisanal vermouth. This setup aligns with the restaurant’s Good Food Guide recognition for its thoughtful Italian wine list and refined yet unpretentious service.

The Good Food Guide — Good

Sitting pretty on a tree-lined avenue in the smart Montpelier neighbourhood, this little restaurant and bar literally draws in passers-by with its good looks. Painted cream with striped café curtains and pavement tables, it wouldn’t feel out of place on a Brooklyn backstreet, while inside the bare plaster walls and simple decoration conjure a homely yet sophisticated mood. There’s only space for about 20, and if you’re feeling sociable, the best seats are at the dining counter, facing a bar lined with bottles of amaro and vermouth – Brusco’s specialist subject. Start with a refreshing vermouth soda or a cherry Negroni while perusing the short, Italian-leaning menu from ex-Moro chef Victoria Skinner. Meat from Trenchmore Farm yields a flavourful bavette with tonnato sauce or there might be rustic fennel sausages with lentils and punchy salsa verde, all wrought with a great deal of care and attention. Portions are generous and a one-dish meal feels particularly good value – it just depends on how far you delve into the all-Italian wine list. Friday nights are typically packed, so it's best to book ahead at weekends.
