The story

Cin Cin Hove: Modern Italian Dining in Brighton

Founders and the open kitchen

Cin Cin Hove brings modern Italian cooking to Brighton’s Western Road, rooted in the personal history of founder David Toscano and head chef Jamie Halsall. What began as a 1972 Fiat van serving street diner crowds in 2013 now operates as a neighbourhood kitchen where fresh pasta rolls out daily. David left a legal career to share the homemade salumi and bread that defined his upbringing, eventually partnering with Jamie to prioritize seasonal local sourcing. The kitchen treats Sussex beef and chalk stream trout as equal partners to ingredients from the Italian pantry, earning consistent praise from the 2026 Good Food Guide.

Handmade pasta and seasonal plates

The menu rotates around sharing dishes that encourage diners to sample multiple textures throughout the evening. Crisp arancini often carry rich Venetian duck ragù paired with a bright parsley and garlic emulsion, while handmade pasta shapes include rigatoni tossed with mussels, kale and spiced sofrito. Sweet potato tortelli arrive finished with truffle sauce, crushed amaretti and sage, offering a clear contrast between earthy filling and nutty crunch. A five course chef’s progression provides a traditional route through the repertoire, complete with dedicated vegan and gluten free alternatives.

Counter seating and the robata grill

High counters place guests directly alongside the cooking line, though elevated tables at the rear offer a quieter vantage point for those preferring distance from the pass. The wine list draws heavily from regional producers across Italy, structured into guided flights that complement the seasonal small plates. Dinners conclude with either a classic tiramisu or a Piedmontese pudding layered with chocolate, caramel and amaretti, occasionally joined by a curated trio of Italian cheeses. This open layout supports the casual dining experience that early critics praised.

The Good Food Guide — Good

‘I love the authentic Italian flavours and the creative dishes made with fresh, quality ingredients,’ is just one ringing endorsement for this ‘small and super-stylish’ eatery. Counter seats bring you up close to the action, with enthusiastic staff buzzing about, slicing hams and pouring drinks while the chefs can be seen cooking pasta al dente and roasting prime cuts of meat and fish. Alternatively, there are some high tables at the back if you want something less frenetic. Light and aromatic rosemary focaccia delivers the goods, and you should be prepared to share the seasonal small plates because that’s the deal here. Crisp, moreish arancini are a fixture (Venetian duck ragù with parsley and garlic emulsion, say), salads are fresh and zingy, and handmade pastas could range from rigatoni with flaked chalk stream trout, mussels, kale and spiced sofrito to tortelli of sweet potato with truffle sauce, amaretti and sage. If you fancy something meatier, how about Sussex beef rump and a rotolo of slow-cooked shin with Gorgonzola, spinach and roasted shallot, all in a rich beef sauce. To finish, tiramisu or a Piedmontese chocolate, caramel and amaretti pudding compete with a trio of Italian cheeses. The five-course ‘chef's menu’ is an opportunity to take a more traditional path through the repertoire (with separate gluten-free and vegan options), all offered with optional Italian wine flights drawn from an impressive, knowledgeably assembled list.
