The story
Embers is the realisation of a long-held dream for chefs Dave and Isaac, friends for fifteen years. Dave was Isaac’s first mentor in the kitchen, and their shared passion for cooking over an open wood fire led them to open a restaurant that feels both ancient and modern. The concept is simple: everything is cooked over a wood fire, with bold, punchy flavours and a focus on seasonality.
Situated in Brighton’s historic Lanes, the restaurant centres on a medieval-style fire cage where the chefs work in full view. The atmosphere is lively and accessible – the kind of place Dave and Isaac themselves would choose on a day off. Dishes are designed for sharing, built around contrasting flavour combinations and the freshest seasonal ingredients.
The menu changes with the seasons, but a standout is their Smoked Bonito Tataki with ponzu, radishes and wasabi cream – a dish that exemplifies their approach: clean, direct and full of character.
Embers has earned a Michelin Recommended award for 2026, with critics praising its style and quality. The Sussex Express called the wood-fired concept “a winner” and noted it “burns with style and quality,” while Brighton Source described it as hitting “the sweet, smoky spot.”
