The story
The Set calls itself the smallest restaurant in Brighton, and with just twelve seats, it is an exercise in intimacy. Ten places line the kitchen counter, two more sit in the window. The space is low-lit, the kitchen open, and the idea is to be part of the experience. There is no printed menu on the night; the team cooks what feels right, driven by produce and seasonality.
This approach has earned The Set a Michelin Recommended award, a recognition that fits the restaurant’s calm, confident ambition. The Set Menu is the heart of the operation: a fifteen-course tasting dinner served Thursday through Saturday, taking about two and a half hours. A blind drinks pairing, with seven selections, is offered alongside a full list of wine, cocktails, sake, and non-alcoholic options.
A sample menu shows the kitchen’s range: Chutoro with English wasabi, Chalk Stream Trout tartare, Bass yakitori with verbena tare, and a Prawn handroll with spicy rhubarb and yuzu. The cooking draws on modern cuisine and omakase principles, but also touches on Japanese BBQ and relaxed Sunday lunches across the week. The Set is run by Dan, Marcin, and Georgia. The tone is laidback but thoughtful—a place to settle in, switch off, and enjoy the close-up view of the kitchen at work.
