The culinary team builds menus around local harvests and responsibly sourced proteins, shifting preparations when supplier deliveries change. Chefs work primarily with grills and roasting pans, applying direct heat to vegetables and whole fish before resting them briefly. Sauces remain minimal so the natural texture of each component stays visible on the plate. This method reduces prep time while keeping flavours sharp and uncluttered, a hallmark of honest cantina cooking.
The restaurant received two radishes from the We’re Smart Green Guide in 2026 after demonstrating measurable reductions in energy use and food waste. Kitchens track every portion carefully, converting vegetable scraps into broths and sending organic leftovers to municipal composting facilities. Lighting and climate controls run on timed sensors that adjust automatically between lunch and dinner shifts. Diners experience consistent temperatures and clean air without ever noticing the underlying efficiency systems.
