The story
Pazzo in Bristol operates as a modern Italian kitchen tucked inside the Tardis-like basement of a Whiteladies Road townhouse. The Bianchis Group launched this venue as their largest project, replacing the beloved Pasta Loco nearby. Their approach to Italian cooking balances light techniques with carefully sourced produce. The open kitchen sits toward the rear, letting diners watch the brigade work through the service.
The kitchen draws heavily from regional traditions, favoring fresh produce over heavy sauces. A runny yellow bucatini arrives folded with braised cuttlefish, cream, agretti and a quiet drop of cider. Summer salads feature blush radicchio tossed with mustard fruits, toasted hazelnuts, crisp apple and stracciatella. Sweet finishes stay equally grounded, pairing a softly trembling limoncello panna cotta with crumbly rosemary and pistachio shortbread.
Brown paper lampshades cast a warm glow over white walls decorated with monochrome photography. Slatted wood ceilings rise above shelves stacked with bottles, tinned tomatoes and everyday provisions. Attentive staff guide guests through a wine list sorted by weight, alongside budget-friendly selections from a dedicated Nonna collection. The layout encourages conversation, with tables arranged to catch the light from both the main floor and the open kitchen.
