The story
Tomo No Ramen in Bristol was born from chef James Stuart’s decade-long obsession with Japanese noodle making. Disappointed by existing options across the UK, he spent his lockdown months researching traditional techniques and testing recipes daily. He named the venture to reflect the quiet familiarity of neighbourhood counters back home. His kitchen now centres on a rotating Japanese menu built around seasonal produce and time-honoured methods.
Stuart builds deeply savoury bases that carry aromatic toppings straight from the pot. You can expect spicy minced lamb soboro, soft boiled ajitama eggs, and fresh garlic chives resting against chunky wheat noodles. Homemade chilli oil adds a sharp finish to every bowl served here. Lighter plates like oyster mushroom karaage with curried mayonnaise appear alongside the main courses when space allows.
