Originally from Lake Maggiore, Maurizio holds a diploma in agriculture and chemistry, which shapes how he approaches ingredient sourcing and seasonal menus. The a la carte menu refreshes weekly based on what arrives fresh at the door, meaning dishes are prepared entirely upon ordering. Maurizio frequently travels by motorbike to visit Lancashire suppliers, securing Goosnargh chicken, Gisburn Forest roe deer, and Bowland wild garlic alongside rigorously imported staples.
