The kitchen sends out a small, seasonal set menu that changes daily, built entirely around the freshest produce from local suppliers. “It takes a great deal of knowledge, experience and focus to create food that while delighting in its simplicity, is also highly accomplished & beautifully done,” the team notes. Dishes like tomato consommé, salmon belly with wasabi, apple, and dill, or lamb with girolle mushrooms and courgette show a kitchen that prizes clean, accurate flavours.
