The story
Maison Bleue brings modern French fine dining to the historic market town of Bury St Edmunds. Chef-patron Pascal Canevet, born in Brittany, leads the kitchen with a style defined by creativity, balance, and a deep respect for seasonal ingredients. The menu changes regularly, drawing on the finest local produce to create dishes that are both artistic and precise.
The restaurant occupies a handsome building on Churchgate Street, where original deep-set windows and oak beams create an intimate, characterful setting. Crisp linen, modern art, and soft lighting add a layer of understated elegance, while the atmosphere remains relaxed and genuinely welcoming. It is a place where fine dining feels comfortable, not stiff.
Maison Bleue has earned a Michelin Recommended award, a mark of consistent quality that aligns with its track record of accolades. The restaurant has also been named Suffolk Restaurant of the Year and received TripAdvisor’s Best of the Best award. Pascal Canevet himself was recognised by the Craft Guild of Chefs with a Restaurant Chef Award.
The kitchen’s French cuisine is built around seasonal delicacies from the region. Dishes might include native lobster, king scallops, or a heirloom tomato carpaccio with black olive and olive oil ice cream – a recipe Pascal has shared from his own repertoire. The wine list is carefully curated, described by the team as “second to none,” and offers excellent pairings for each course.
Maison Bleue is open for lunch and dinner Tuesday to Saturday, with last orders at 13:30 and 20:30 respectively. The restaurant welcomes guests aged ten and over, and gift vouchers are available for those who want to share the experience.
