On Mill Road in the historic city of Cambridge, Vanderlyle operates with a clear sense of purpose. Headed by chef Alex Rushmer, this small restaurant works directly with farmers, growers and producers to create ingredient-centric dishes and matched drinks. The approach is plant-led and seasonal, built around local, ethical and regeneratively-grown produce. Vanderlyle has earned a Michelin Recommended distinction for its precise, thoughtful vegetable cookery.
Vanderlyle was founded to take a different approach to fine dining – one that considers the environment as well as the mental and physical health of hospitality professionals. The restaurant is open for just four services each week, giving the team a work-life balance rarely found in the industry. When they opened, they did not intend to lead on vegetable cookery, but the challenge of coaxing flavour from plants and the enthusiastic response from guests meant they have never served meat or fish as part of their menu. They source local, regeneratively-grown ingredients where possible and encourage suppliers to make positive changes.
Guests book and pay for the tasting menu in advance via Tock. This pre-paid model allows the kitchen to prepare correctly for dietary requirements, ensure enjoyable experiences, and place precise orders – minimising waste and stress. New reservations are released a month at a time, on the first Tuesday of each month. A newsletter is sent a few hours before tables become available, sharing news, recipes and other discoveries. The menu changes with the seasons, reflecting the best produce from local suppliers. Sample menus are available for vegan and gluten-free diets, and the team accommodates dietary requirements with care.
