The story
Matsudai Ramen in Cardiff serves Japanese cooking that has earned a spot in The Good Food Guide. Founder James Chant arrived at the local food scene without professional culinary training, having spent years working in the music industry. He launched the venture as a pop-up in September 2019, and events sold out within minutes. When lockdowns halted live gatherings, he pivoted to home delivery kits, eventually shipping tens of thousands of portions nationwide.
This approach to Japanese techniques prioritises texture, letting al dente noodles hold their shape against rich tonkotsu broth. Thin slices of tender pork loin and soft boiled eggs sit directly in the steaming liquid. Guests can also order delicate small plates like chopped scallops dressed with creamy yuzu mayo. Imported sake and Asahi beer fill the back bar shelves.
The Good Food Guide named the venue a Local Gem after the team filled the former banking hall with stainless steel equipment. Preserved stone arches and high ceilings frame the dining floor. Patrons typically claim seats at long communal tables or line up along the narrow service counter. Every bowl follows the same disciplined method, turning simple ingredients into consistent results.
