The story
TimeSpirit marks the first dining concept outside of Spain from the legendary El Celler de Can Roca, born from a twelve-year partnership with The Macallan. Together, they have crafted a permanent dining experience on The Macallan Estate in Speyside that is a culinary exploration and playful expression of the distillery’s story.
The team travelled through Scotland, learning its customs and marvelling at its produce. What emerged is a tasting menu that reflects a shared drive for innovation and respect for nature. The result is a pinnacle of modern cuisine in Scotland, recognised with a Michelin Recommended award for 2026.
Each dish is curated with seasonal, local ingredients, either foraged from The Macallan Estate or sourced from local suppliers. The six-course lunch tasting menu is £75 per person, while the nine-course dinner tasting menu is £105 per person.
The dining room, designed by architect David Thulstrup, is centred around the kitchen, offering an intimate view of the creative culinary process. Natural light floods the space, with sweeping views onto the rolling hills of Speyside. At the heart of the room, exclusive Macallan single malt expressions are housed in an oak-panelled cellar, surrounded by a selection of fine wines and sherries curated by Josep Roca, award-winning sommelier of El Celler de Can Roca.
