The story
Dulse brings a fresh, unfussy approach to seafood in Edinburgh’s West End. Created by chef Dean Banks, the restaurant occupies two floors: an intimate wine and cocktail bar downstairs serving small sharing plates, and a more formal seafood restaurant upstairs. The atmosphere is relaxed and neighbourhood-friendly, the kind of place where you can drop in for a quick oyster or settle in for a full dinner.
The menu changes daily, driven by what comes straight off the boats. “This ensures that you get the highest quality product and we, as a business, are as sustainable as possible,” the team notes. Expect classic Scottish seafood dishes given a modern twist – think oysters, shellfish, and fish prepared with respect for the ingredient. Desserts are taken seriously too, with a big sweet tooth on display.
Downstairs, the bar is a love letter to Scottish producers. The back bar is exclusively Scottish, featuring spirits, beers, and soft drinks from across the country. Chef Patron Dean’s own Lunun Gin, made in his hometown of Arbroath, sits alongside MOND Vodka and Hirundine 12-Year-Old Single Malt. Cocktails are crafted by a wizardly team, and the wine list earned an AA Notable Wine List Award for 2025–26 – a reflection of the care put into pairings.
Dulse’s commitment to quality has been recognised by Michelin, earning a place in the guide’s Recommended category for 2026. It’s a well-deserved nod for a restaurant that does one thing – seafood – and does it with integrity, using the best of Scotland’s larder.
