The story
In the Leith neighbourhood of Edinburgh, Dùthchas takes its name from a Scottish Gaelic word that describes the relationship between people, animals, land and sea. It is a fitting philosophy for a restaurant built around the best Scottish seasonal ingredients, sourced from the country’s islands and worked with care.
The kitchen offers a 6-Course Tasting Menu (£95) that explores the land and sea of Scotland, alongside a 3-Course “Wee” Taster Menu (£65) for a shorter introduction. A set lunch menu is also available at £29.95. Each is built around what is available at the time, working closely with local farmers, suppliers and producers. The front of house team presents each dish, explaining the provenance of the ingredients.
A sample menu might begin with canapés such as carrot with tapioca and cinnamon, or chicken with hazelnut and date. Starters could include trout with grapefruit and chive, followed by mains like pigeon with chicory and celeriac, and desserts such as almond with white chocolate and apricot. A wine pairing option is available for both tasting menus, with regular and premium selections.
