Lannan Bakery opened its doors in Edinburgh in 2023, operating as a dedicated bakery focused on handmade viennoiserie. Founder Darcie Maher leads a small team that prepares every component from scratch in the Hamilton Place kitchen. Their rotational menu shifts with ingredient availability, ensuring each batch reflects current harvests. Guests can request dietary notes directly from staff, as most items accommodate vegetarian and halal preferences.
Visitors typically arrive before mid-morning to secure items like the cardamom kouign amann or the tulameen raspberry and caramelised coconut tart. The display counter also features twice baked selections such as almond frangipane croissants and hazelnut pain au chocolat alongside weekend specials like chocolate sponge layered with morello cherry confit.
