The story
Moss is a constantly curious farm-to-table restaurant on Edinburgh’s St Stephen Street. Its heart lies not in the city but on an organic farm in Angus, which supplies over 90 ingredients for the kitchen. This connection goes far deeper than produce: the tables are made from the farm’s wood, the ceramics from its soil, the paint on the walls from its ash, and the music playing in the dining room was recorded in an outbuilding on the land. Even the ink and quill used to sign birthday cards are made from farm flowers and feathers.
Every detail, as the team puts it, “reflects the ecosystem of our farm.” The result is a dining experience that feels rooted in a single place, yet entirely original. The menu is 100% Scottish sourced, and over half the drinks list comes from the British Isles.
