Working closely with Edgefield Craft Butchers, the team selects mixed and single-breed Scottish-reared cattle that are grass-fed, hung on the bone, and dry-aged for optimum flavour and tenderness. Every step – the breed, the feed, the hanging, the ageing – is a craft honed over time, built on simple principles: the best ingredients, treated with respect, prepared by a team that cares.

The dining room is set against a backdrop of aged brown leather, rich dark wood, and the classic Butchershop “buzz”.
