The story

Sugar Boat Helensburgh: A Modern Bistro With Maritime Roots and Seasonal Plates

The shipwrecked name and its modern revival

Sugar Boat operates as a relaxed neighbourhood bistro at 30 Colquhoun Square in Helensburgh, serving a seasonal menu from morning until late. Restaurateur Will Smith brought his London bistronomy background here in 2016, replacing the heavy formality of Soho venues with an all-day dining model. The establishment takes its name from a local cargo vessel that grounded near the coast in 1974 while transporting raw sugar to the Tate & Lyle refinery. This consistent quality secured a Good Food Guide listing for 2026, confirming the success of the relaxed approach.

Seasonal plates and coastal produce

The kitchen rotates its offerings to match Scotland’s larder, reflecting a flexible approach to contemporary bistro cooking. Midday service shifts toward heartier preparations like creamy Cullen skink loaded with smoked haddock or a whole roasted aubergine dressed with a nutty chickpea ragù. Evening tables receive additions such as Gigha halibut paired with mushroom risotto or a freekeh and chicken salad. Sweet finishes arrive as fig roll with redcurrant ice cream or a dense chocolate and praline crémeux served beside Arran oatcakes.

Courtyard terraces and curated libations

Guests navigate between a ground-floor wine shop and two outdoor zones heated for year-round comfort. The rear courtyard functions as a sheltered sun trap, while the front terrace faces the square for casual street-side drinking. Bar counters host sausage rolls and pork crackling alongside a carefully selected roster of wines and Scottish malts. Afternoon tea and weekend brunch formats keep the space active throughout the day, reinforcing its standing as a dependable local destination.

* Will Smith has moved back to London and is now working as GM at Claude Bosi's Josephine.* This warm and joyful all-day venue – part café, bar and bistro (plus wine shop and guest rooms) – operates under the cheerful eye of restaurateur Will Smith, who relocated from London in 2016 after running the much-heralded Arbutus in Soho and Mayfair’s Wild Honey. Smith transposes his Soho ‘bistronomy’ ethos of top-quality dining in a relaxed setting with a crowd-pleasing menu that changes seasonally and begins with breakfast – perhaps black pudding hash and fried egg or porridge with fruit compote, honey, almonds and chia seeds. The morning deal segues into lunch when creamy Cullen skink loaded with leeks, potato and smoked haddock or moules marinière are offered alongside bistro staples such as steak frites or a tasty and original whole roast aubergine topped with a chickpea ragù loaded with tomato, nuts and paprika. There’s a similar offering at dinner, with the addition of chicken and freekeh salad or Gigha halibut with mushroom risotto. For dessert, expect fig roll and redcurrant ice cream or rich chocolate and praline crémeux, plus cheeses from George Mewes, served with honeycomb and Arran oatcakes. Weekend brunch, a cheery kids' menu, bar snacks and afternoon tea add to the appeal, while cocktails sit alongside a well-considered wine list. And the name? Sugar Boat is the local name for a cargo ship that ran aground off Helensburgh in 1974 while carrying a cargo of sugar destined for the Tate & Lyle refinery at Greenock.
