The chefs behind the stove

Andrew Pern acquired the establishment in nineteen ninety six and helped pioneer the gastropub concept across Britain. He now shares daily command with chef director Stephen Smith, who brings Michelin level experience from his previous roles at Paul Heathcote’s Restaurant and Pool Court. Smith earned Yorkshire Life’s Chef of the Year award in twenty twenty three for his precise handling of local ingredients. Together they maintain exacting standards while allowing the seasonal harvest to dictate the daily specials.

Rising from the ashes

This grade two listed property dates back to the fourteenth century and originally served as one of Yorkshire’s earliest thatched public houses. A devastating fire in november twenty twenty one consumed the main dining room and the private loft space above it. Builders spent twelve months reconstructing the interior using surviving original oak beams and meticulously restoring the historic Mouseman Thompson bar furniture. Guests now sit beneath a freshly laid thatch roof while surrounded by restored craftsmanship.

Drinks and pairing

The beverage programme operates with the same seasonal discipline as the kitchen. A rotating wine list features selections chosen alongside the wine consultant to complement each dish on the tasting menu. Patrons can also choose from hand pulled ales drawn directly from the pub bar or explore a detailed catalogue of Churchill’s ports. The drink choices mirror the restaurant’s commitment to finding quality within the wider Yorkshire region.
