The current facility sits inside Plumgarth’s Lakeland Food Park, where Niall Monks stones mill organic and heritage British grains like Barber wheat and rye on site. Every batch undergoes a strict forty-eight hour proofing period before hitting the oven. This deliberate schedule replaces commercial accelerants with predictable acidity and deep flavour development.

Signature loaves and techniques

The production line favours ancient varieties and international baking traditions. The Ancient Emmer & Kombucha loaf captures wild cultures cultivated over extended periods, while the Danish Rugbrød marries rye berries with toasted linseed and pumpkin seeds across a three-day bake. A French-inspired classic emerges as the Heritage White Bloomer, offering a tender crumb and sturdy crust designed for daily use. Each recipe maintains precise hydration levels and relies solely on water, salt, and unmilled flour.

The Kendal counter operates as a quiet hub where locals collect fresh loaves and pair them with specialty coffee from the adjacent Rinaldo’s roastery. Baker Aidan Monks was on the sourdough scene long before it became fashionable. In fact, he first set up shop in Kendal in the late ‘80s and has built a mini empire in the North West that continues to rake in the plaudits. Exclusively British organic flours are baked into a wide range of loaves and pastries that are available for delivery country-wide and are sold over the counter in Burneside, Altrincham Market, Kirkby Lonsdale’s weekly market, and at the Kendal HQ, which is a worthy detour for any Lake District visitor. Favourites from the range include the khorasan loaf, Northumberland rye and the flavoursome, buttery croissants which, with a specialty coffee from neighbouring Rinaldo’s, makes for the perfect mid-morning treat.
