The story
Chapters is the Michelin Green Star restaurant from Charmaine and Mark McHugo, set in the heart of the Welsh town of Hay-on-Wye. The couple’s philosophy is rooted in highlighting the best the area has to offer, with menus that showcase seasonal, locally sourced and often home-grown produce. The restaurant also features a bottle shop offering carefully selected organic and low-intervention wines, alongside locally produced beers, ciders and spirits – all available to take home.
The seasonally changing menu encourages guests to experience something different on every visit. By serving a set menu, the team can focus on delivering delicious dishes without the risk of food waste. The menu can be adapted for most dietary requirements, and the kitchen’s approach to British cuisine is both precise and imaginative. As one guest put it: “I’ve never had so much fun eating.”
Located within a walled garden eight miles from Chapters is the kitchen garden, managed in a way that puts soil health first. Working with regenerative methods, the no-dig, chemical-free garden aims to improve the biodiversity of the area while growing interesting vegetables, herbs, fruits and edible flowers. This commitment to sustainability and flavour is at the core of every dish at Chapters.
