The story
Bundobust Leeds anchors a network of venues with its original Indian Vegetarian street food kitchen on Mill Hill. Founders Mayur Patel, whose family runs the legendary Prashad, and Marko Husak, a pioneer of Bradford's craft beer scene, tested their concept through sold-out pop-ups before opening these doors in summer 2014. Executive chef Gopi, recruited from Prashad, brings that lineage to the kitchen alongside his colleague Maity. The menu treats vegetarian cooking as a default strength rather than a constraint, building around vibrant Gujarati street food designed for sharing.
The kitchen highlights include okra fries seasoned with black salt and mango powder, a plate that pairs easily with paneer tikka or gobi Manchurian. This sweet and spicy dish offers a distinct Indo-Chinese counterpoint to the core Gujarati repertoire. A signature Anglo-Indian mash-up called Raghda Pethis layers mushy peas spiced with garam masala under potato cakes, sev, and fresh tomato, finished with tamarind chutney. Diners are advised to order two or three plates per person to sample the range of chaat, vada pav, and dhal variations across the table.
The venue holds a Good Food Guide Local Gem distinction for its electric atmosphere on the corner of Mill Hill and Briggate. The room feels snug and rustic, dominated by communal beer-hall benches that invite guests to reach across for bhajis while solo booths accommodate smaller parties. Twelve keg lines and two casks pour house-made brews from the Bundobust Brewery, including Dhania Pilsner, alongside guest collaborations. The drink list extends to cocktails featuring kitchen infusions and chai, completing a gastropub offering built on fresh, flavour-packed dishes and boundary-pushing brews.
