The story

The Fox at Willian | Modern British Dining Near Letchworth Garden City

Sourcing and the kitchen approach

The Fox at Willian brings seasonal modern British cooking to a prominent spot on Willian’s village green, just outside Letchworth Garden City. Its two rosette kitchen relies on direct supply lines to the north Norfolk coast for fresh catch and partners with nearby Hertfordshire farms for vegetables and meats. This emphasis on provenance shapes every plate, allowing the cooks to highlight regional produce without unnecessary complication. The menu shifts regularly to reflect what arrives fresh, maintaining a straightforward gastro pub ethos that values quality ingredients over theatrical presentation.

Standout plates and pairings

Guests frequently return for the pan roasted stone bass served alongside salmon tortellini and braised pearl barley. Hearty meat selections feature prominently as well, with the Hampshire pork belly dressed in pickled walnut ketchup proving especially popular. Desserts follow the same grounded philosophy, offering a rich treacle tart paired with buttermilk ice cream. The cellar complements these choices with thirty distinct wines available by the glass, alongside a steady rotation of local real ales.

The village green setting

Dining unfolds across an air conditioned interior and a newly landscaped garden that faces the 15th century All Saints church. The smart open plan bar caters to casual visitors seeking a pint, while the atrium style room accommodates longer meals under higher ceilings. Staff maintain a polite rhythm throughout service, ensuring tables receive consistent attention. Visitors can easily transition between indoor comfort and outdoor seating, making the space equally suited for quick lunches or extended evenings. Recognition from the Good Food Guide underscores how consistently the kitchen delivers this balanced approach to seasonal British cuisine.

The Good Food Guide — Good

It's worth knowing about this revamped 18th-century pub with rooms overlooking Willian’s village green – it's just a short drive from the A1. If you’re after something quick and casual, head to the smart open-plan bar for a pint of real ale and a plate of Orford oysters. Alternatively, trade up to a full meal in the atrium-style dining room. The owners have strong supply lines to the north Norfolk coast for fish, so look for daily specials and well-crafted modern dishes with lots of components – from buckets of Brancaster mussels to pan-roasted stone bass with salmon tortellini, braised pearl barley, celeriac risotto and charred baby leeks. Otherwise, there is meat and game in abundance – perhaps Hampshire pork belly dressed with pickled walnut ketchup, roasted parsnip and pine-nut crumb. The kitchen also caters admirably for those with special dietary needs. To finish, tiramisu with matcha, kirsch cherry and white chocolate aero was a winner for one visitor, although the treacle tart with buttermilk ice cream is hard to resist. Service is 'polite, efficient and attentive', while three-dozen wines include ample options by the glass. A new landscaped garden area (with its own bar) promises plenty of outside eating opportunities.
