In the heart of Lewes, Dill brings a fresh, communal approach to modern European cuisine. Since opening in 2022, chef Dan Cropper has turned a historic South Street site into a welcoming bistro that the Michelin guide praises for its “admirably inventive” small plates and “knowledgeable and personable service team.” The 2026 Bib Gourmand nod recognises both the quality and the value of what’s on the plate.

A Bistro Built on Local Connections

Cropper’s ethos is rooted in localism and sustainability. Dill works closely with nearby farms and producers, sourcing the best seasonal ingredients that the region offers. The menu changes constantly, reflecting what’s ripe and ready. Low-intervention wines and brews from Lewes’s own breweries complete the picture, while the restaurant’s location on a street once busy with timber yards and shipping wharves adds a layer of quiet history.

Eating Together, One Dish at a Time

Dill’s menu is designed for sharing. Dishes arrive as they’re ready, encouraging a relaxed, communal rhythm. Start with oysters prepared three ways – raw with Tozasu and wasabi tobiko, pickled with horseradish and buttermilk, or grilled with beef fat hollandaise and smoked ox heart. Snacks like heritage potato crisps with seaweed gribiche and Flint Owl sourdough with house-made yeasted butter set the tone.

Plates range from roast sea trout with crab, cucumber, and caviar to a braised rabbit salsiccia with chorizo and piquillo peppers. A salt-baked celeriac with confit egg yolk and apple, or burrata with heritage beetroot and walnut, offer thoughtful vegetarian options. Desserts, such as Valrhona chocolate tart or rhubarb parfait with white chocolate and ginger, end the meal on a high note.

It might seem like a sweet little cottagey tea room from the outside, but looks can be deceiving. Inside, it's all rather humble too, but a buzz of anticipation comes when you study the blackboard menu – a veritable smörgåsbord of global flavours in bold and imaginative combinations. Small sharing plates and bigger platters mean you can graze or gorge as you please, while everything comes along at a sensible, steady pace. Among the snacks, an oyster arrives dressed prettily with perfectly balanced Japanese flavours, while lobster and crab arancini are deliciously rich with truffle. The small plates themselves – three each of meat, fish and vegetable – range from a stew of tripe, chorizo and morcilla (‘so hearty it could fuel a Spanish farmer for 48 hours’) to a fabulous piece of hake with echoes of French haute cuisine and cured sea trout popping with the flavours of Szechuan. Local ingredients are allowed to shine, as in the Parham Park venison featured on one the larger platters (a roast haunch with Harvey's Imperial Stout, bacon crumble and faggot). This is clearly a place which follows the nose-to-tail ethos – note the 'Martmite'-glazed ox tongue and duck-heart mapo tofu. To round things off, we found a Caramello chocolate tart a tad too sweet, although the rhubarb knickerbocker glory is a little piece of nostalgia for many recipients. Local beers stand out on their own blackboard, and the well-chosen wine list kicks off with house selections from £29.50. Lucky Lewes.
