The story
At Aïda Hôtel & Spa in Crans-Montana, the Alpine cuisine program operates on a straightforward premise of communal dining. Chef Franck Reynaud directs operations from his acclaimed background at Hostellerie du Pas-de-l’Ours, while Gioele Marzola executes the daily service. Their signature Grand Partage menu structures the evening around sixteen distinct plates designed specifically for the table. This structured sharing format recently earned a fourteen-point rating from Gault&Millau, validating the balance between technique and hospitality.
This regional kitchen moves quickly through seasonal ingredients and precise technique. A focaccia topped with rare tuna belly rests beside charred tomatoes and artichokes dressed in citrus vinaigrette. Traditional Italian meatballs sit atop an onion crémeux before servers pour a thick alpine cheese cream directly onto the dish. Subsequent courses feature pan-seared lamb ravioli accompanied by a yogurt chive sauce, followed by a layered hazelnut millefeuille.
Wooden paneling and warm textures define the dining space, echoing the chalet-inspired architecture of the adjoining guest suites. Large south-facing windows flood the room with natural light during winter months. Guests can also dine on the outdoor sun terrace overlooking the heated swimming pool. The adults-only property maintains a quiet pace, allowing visitors to focus on the valley views and the steady rhythm of Alpine cooking.
