The story
Cabotte takes its name from the small huts Burgundy winegrowers keep within their vines, and that sense of pastoral authenticity is intentional. Founded by two Master Sommeliers—Xavier Rousset and Gearoid Devaney—the restaurant sits on Gresham Street in London’s Bank district, yet feels like a traditional bistro in the French countryside. Designed by Rosendale Design, the space is warm and unpretentious: a place where a deep knowledge of French wine and cooking meets the rhythm of the City workday.
The partners’ credentials are formidable. Xavier Rousset became the youngest ever Master Sommelier at 23, launching Michelin-starred Texture and the 28-50 wine bars before opening Blandford Comptoir. Gearoid Devaney trained with three-star chef Pierre Gagnaire in Paris, helped open Tom Aiken’s first Chelsea restaurant (which earned a star), and now directs Burgundy specialist Flint Wines. Together, they have built a restaurant that puts the wines of Burgundy at its heart.
Leading the kitchen is Head Chef Elliot Miller, whose 17-year career includes stints at Capital Hotel and Michelin-starred Kitchen W8, where he developed his flair for modern French cooking. At Cabotte, he designs a menu that changes regularly, built around simple, exact cooking and the finest seasonal ingredients. Lunch and dinner offerings range from snacks like duck liver parfait tartlet with quince to starters such as asparagus with stracciatella and truffle pesto, or Cornish crab with heritage tomatoes and tomato dashi. Mains include duck breast with orange jus, Scottish halibut with mussels and smoked haddock velouté, and a lunch-only handcut tagliatelle with Cornish crab and prawn bisque. Desserts like chocolate crémeux with apricot sorbet and apple tarte tatin for two round things out.
The wine list is extraordinary: over 1,000 bottles, 650 of them from Burgundy, sourced direct from domaines like Ballot-Millot, Cathiard, and Etienne Sauzet. A sommelier is always on hand to guide you through the classics and the rarities. This singular focus on Burgundy—rare even in London—is what earned Cabotte its Michelin Recommended status, recognition that speaks to both the cooking and the cellar.
Open Monday to Friday from noon until 10pm, Cabotte functions as both restaurant and wine bar. It offers a set lunch menu, private dining, and takeaway. The atmosphere is unhurried yet professional—the kind of place where you can order a dozen Maldon rock oysters with chardonnay pickled shallots and a glass of something Burgundian, or settle in for the full tasting experience.
