The story
Fonda, on Heddon Street in London’s Mayfair, takes its name and spirit from the traditional Mexican fonda – a family-run eatery. Chef Patron Santiago Lastra translates that warmth into a menu that draws on the vibrant cooking and colours of Mexican markets and homes, filtered through a lens of British ingredients and modern technique.
Born in Mexico City and raised in Cuernavaca, Santiago Lastra’s career includes stages at Mugaritz in San Sebastián and working with René Redzepi during Noma’s seven-week residency in Mexico. Fonda is his second London restaurant, following the critically acclaimed KOL. He describes his drive as a desire to build a community – among his team, local producers, suppliers, and guests.
The menu at Fonda is built around regional Mexican classics, prepared with what the restaurant calls “creative preparation and modern techniques.” The kitchen offers a selection of food and drink menus, including a Chef’s Selection and a dedicated Sunday offering. Diners can expect dishes that respect their roots while feeling distinctly of the moment.
Fonda’s approach has earned it a Michelin Recommended distinction in the 2026 guide, a nod to the quality and consistency of the cooking. The restaurant sits in a quiet street just off Regent Street, with a private room available for events and groups.
The space is air-conditioned and serves dinner nightly, with lunch service from Tuesday to Saturday. Sundays are a shorter, dedicated affair. The feel is that of a contemporary London restaurant with a genuine Mexican heart – a place where the cooking speaks for itself.
