The story
At Indian Rasoi in Carouge, modern Indian cuisine finds a new expression through Chef Kuldeep Rawat’s deliberate blending of heritage and local sourcing. Born in New Delhi, he absorbed the rhythms of spice preparation from his mother before training at prestigious hospitality schools and five star hotels across India. A pivotal period managing the kitchen at the Mandarin Oriental Geneva refined his technical approach, paving the way for his own venture. He now grounds those deep South Asian flavors in Swiss agriculture, matching regional wines to each menu cycle and relying on seasonal vegetables to anchor heavier meat courses.
Meals typically open with crisp papadam accompanied by firm northern black lentils that hold their texture against rich sauces. Fresh prawns rest in lemongrass and saffron marinades until bright citrus notes emerge, balancing subsequent tandoori elements. A smoked eggplant caviar introduces earthy depth, though its pronounced seasoning shines brightest when paired with ginger braised lamb or delicate marinated chicken breast. These proteins arrive alongside fluffy steamed rice or warm naan, creating plates designed for steady pacing rather than rushed service.
Located within Carouge’s older quarter, the interior maintains an intimate layout where proximity between tables encourages a relaxed pace. Polished fixtures and directional lighting establish a refined environment that mirrors the careful plating standards above. Service remains attentive yet unobtrusive, allowing guests to focus on the layered spice profiles without interruption. Larger windows and an adjoining terrace invite natural light during daytime hours, extending the dining area seamlessly into the street.
