The story
Kioku, meaning “memory” in Japanese, is the personal vision of Sushi Master Endo Kazutoshi. A third-generation sushi master, Endo grew up in his grandfather’s sushi restaurant in Yokohama, learning the craft from the fish markets up. This journey, shaped by his mother’s artistic influence and his travels between Tokyo and Yokohama, is distilled into every dish at Kioku by Endo, which sits on the sixth floor of Raffles London at The OWO in Whitehall.
