Legado introduces a contemporary Spanish approach to London's Shoreditch district, where Chef Patron Nieves Barragán Mohacho channels her Basque roots and decades of London experience into a menu that highlights Spain's lesser-told regional stories. Born in Santurtzi near Bilbao, Nieves grew up accompanying her mother through bustling fish counters and weekend markets, an upbringing that now drives a kitchen committed to craftsmanship and moving tradition forward. This is the second solo venture following Sabor, designed to embrace the nuances of each Spanish province while stripping away clichés.
Direct relationships with producers underpin these dishes, including recent field trips to Extremadura that introduced La Retorta sheep's milk cheese and acorn-fed Jamón Ibérico from Señorío de Montanera. These connections manifest in plates like the prawn and wild mushroom stuffed squid swimming in ink sauce or the black fideuà finished with rock shrimp and alioli. The menu balances familiar formats with specific techniques, offering herb-crusted rabbit shoulder alongside chargrilled milk-fed lamb kidneys and a quarter Segovian suckling pig available by pre-order. Even the vegetable courses reflect this depth, featuring chargrilled leeks dressed with escabeche or tomato paired with scallop roe.
The space operates as a multifunctional venue within a warm-toned warehouse refit, accommodating both a leisurely dining room and a lively taberna for all-day tapas service.
