The restaurant’s circular dining room, dominated by a floor-to-ceiling wine cellar, sets a calm, sophisticated tone. It has proudly retained its Michelin star in the 2026 guide—a testament to consistent high-quality cooking.
Executive Head Chef Orson Vergnaud leads the kitchen. Born in Paris and raised in Toulouse, he originally studied mathematics before a stint helping a friend in the kitchen changed his path. He earned a cooking degree, worked as Senior Sous under Paul Walsh at City Social, and took his first Head Chef role at Le Pont de la Tour. Vergnaud cites Frederic Anton’s food presentation and Matt Abé’s dedication as influences. His team shares a passion for excellence, evident in every detail of the meal.
The restaurant takes its name from Château Pétrus, one of the world’s most esteemed wines, and the list features many vintages of that label—including the first offering by the glass in Europe. Beyond Pétrus, the cellar focuses on France’s top vineyards and other rare European gems. The wine list earned a place on the World’s Best Wine Lists 2024, and the sommelier guides pairings with the seasonal menus, which include A La Carte, Lunch, Discovery, and Prestige options.
For a more immersive experience, the Chef’s Table seats up to eight guests and offers a bespoke seven-course tasting menu, with views of the kitchen in action. Special events, such as the Guigal wine dinner hosted by Philippe Guigal, further showcase the restaurant’s commitment to exceptional wine and food pairings.
