The story
Founder and head chef Chavdar Todorov runs Slowburn, a vegetable-focused kitchen in Walthamstow, which shares its space with London's only craft jeans maker, Blackhorse Lane Ateliers. Todorov draws inspiration from travel and books to build a cosmopolitan menu designed to champion produce while putting meat on the side. The team aims to reduce waste and encourage diners to eat at a slower pace using carefully sourced ingredients and thoughtful techniques.
The kitchen builds dishes around texture and umami, starting with confit artichoke prepared as a flower served alongside romesco sauce or folded into black-bean gyoza tacos topped with coriander salsa.
